This time of year, I see so many recipes on Pinterest and other places for chicken soup in one variation or another. I'm a big fan of chicken soup, especially if it has cheese in it. This recipe for Chicken Broccoli Chowder has been a favorite of my family for years. So in the winter, I have to make a pot of it at some point. That point came for me recently during the Polar Vortex of 2014. It also helped that I received a vegetable chopper for Christmas which made chopping the carrots and onion quick and easy.
Combine in large pan or Dutch oven:
2 c. sliced carrots
2 c. water
1 ½ c. chopped, cooked chicken
1 can chicken broth
1 - 10 oz. pkg. frozen broccoli
½ c. chopped onion
1 tsp. salt
Bring to boil, simmer 10 minutes. Bring to a full rolling boil and gradually
add ½ c. oat flour (or 1/4 c. regular flour), stirring constantly. Stir in 2 c. milk, simmer about 10 minutes,
remove from heat and stir in 1 ½ c. cubed cheese (velveeta shredded cheese
works best). Cover; let stand 3 - 5
minutes. Serve.
